Avocado with Cheese Cubes

Ingredients

  • 5 cherry tomatoes
  • 75 g feta (1 piece)
  • 75 g gouda (1 piece)
  • 20 g pitted black olives (1 tbsp)
  • 1 small onion
  • 2 sprigs Mint
  • 400 g ripe avocado (2 avocados)
  • 1 Lime
  • 1 tbsp Olive Oil
  • Salt
  • Pepper

Instructions

  1. 1.

    Wash tomatoes and quarter them. Cut feta and gouda into 1 cm cubes. Slice olives into rings. Peel onion and cut into thin strips.

    Rinse mint, shake dry, and pluck leaves. Halve avocados, remove pits, and carefully scoop out the flesh leaving a 1 cm border.

    Dice avocado flesh and mix with tomatoes, olives, cheeses, onion, mint, 2 tbsp lime juice and olive oil. Season with salt and pepper.

    Brush remaining lime juice over avocado halves and fill with salad mixture.
