Spooky Halloween Pasta Salad

Ingredients

  • 500 g black spaghetti
  • 300 g pumpkin flesh (cut into 0.5 cm thick slices)
  • 75 g sun‑dried tomatoes in oil
  • 1 red chili pepper
  • 4 Spring Onions
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • Salt
  • black pepper (ground)

Instructions

    Cook the pasta in plenty of boiling salted water until al dente, drain and reserve some cooking water. While the pasta cooks, cut a 5 cm long bone template from paper and use it to cut small bone shapes out of the pumpkin slices. Blanch the pumpkin bones in boiling salted water for about 3 minutes, then drain, rinse with cold water, and set aside on kitchen paper.

    Drain the sun‑dried tomatoes, pat them dry, and slice into strips. Wash, trim, slit the chili pepper lengthwise, remove seeds and white membranes, then cut into fine strips. Wash and trim the spring onions, slicing them into thin rings.

    Whisk together lemon juice, salt, pepper, and olive oil until emulsified. Toss the pasta with 2 tbsp of reserved cooking water, the vinaigrette, tomato strips, chili strips, and spring onion rings. Season again with salt and pepper, then serve garnished with pumpkin bone shapes.
