Chicken Salad with Beet Greens

Ingredients
- 4 chicken breast fillets
- 200 g lamb's lettuce
- 200 g beet greens
- 1 tbsp coarse Dijon mustard
- 4 tbsp olive oil
- 2 tbsp Apple cider vinegar
- Salt
- ground pepper
- 1 yellow bell pepper
- 2 plum tomatoes
- olive oil for frying

Wash, pat dry, and cube the chicken breasts. Heat a little oil in a pan and brown the pieces for about 1-2 minutes. Season with salt and pepper and set aside.

Clean the lamb's lettuce, then wash and spin dry together with the beet greens. Wash the bell pepper, halve it, remove seeds, and dice. Cut the tomatoes into wedges.
