Ingredients

  • 4 slices Whole grain toast
  • 1 tsp tomato paste
  • some endive leaves
  • Chives
  • 2 Tomatoes
  • 1 Avocado
  • a bit lemon juice
  • Salt
  • freshly ground pepper

Instructions

    Toast the bread and let it cool. Spread tomato paste on the slices.

    Wash, trim, and dry the endive. Rinse chives, shake dry, and slice into thin rings. Wash tomatoes, pat dry, remove stems, and cut into slices.

    Halve the avocado, remove the pit, peel, then cut into wedges and drizzle with lemon juice.

    Layer alternating slices of toast with endive, tomato, and avocado. Season with salt and pepper. Sprinkle chives on top. Finish with a final slice of toast. Cut diagonally and serve.
