Avocado Orange Salad

The Avocado Orange Salad from Spoonsparrow serves as a healthy starter just as well as a light dinner and delivers plenty of vital nutrients.

Ingredients

  • 3 oranges
  • 2 Avocados
  • 1 bundle arugula (80 g)
  • 1 handful mint leaves (5 g)
  • 0.5 organic lime
  • 100 g mango flesh
  • 5 tbsp olive oil
  • 1 tsp Honey
  • 1 tbsp coarse mustard
  • 0.5 tsp turmeric powder
  • Salt
  • Pepper
  • 200 g burrata (or mozzarella)

Instructions

    Cut the zest and white pith off two oranges with a sharp knife, then slice the fruit. Halve the third orange and squeeze out its juice.

    Halve the avocados, remove the pits, scoop out the flesh with a spoon and slice. Wash and pat dry the arugula and mint leaves. Slice the lime. Dice the mango into small cubes.

    Whisk the orange juice with olive oil, honey, mustard, and turmeric to make a dressing. Season with salt and pepper. Tear the burrata into pieces. Arrange everything on plates and drizzle the dressing over the avocado orange salad.
