Ingredients

  • 8 slices whole grain toast
  • 2 small ripe avocados
  • 3 tbsp white balsamic vinegar
  • Salt
  • Pepper
  • 1 box watercress
  • 4 Cherry Tomatoes
  • 1 avocado (for garnish)

Instructions

    Toast the bread slices until golden and let them cool. Cut the avocados in half, remove the pits, scoop out the flesh with a spoon and mash it with a fork; season with salt and pepper, then stir in the white balsamic vinegar. Peel, halve, and cut the garnish avocado into 16 wedges. Wash and quarter the cherry tomatoes.

    Wash the watercress, shake off excess water, and trim with scissors. Spread the avocado paste onto the toasted bread slices, using a knife to spread evenly; slice each loaf diagonally. Place one wedge of garnish avocado on each corner of a toast piece, sprinkle with watercress, and skewer a tomato wedge with a toothpick onto the avocado toast. Arrange on a small plate and serve.
