Ingredients

  • 2 Tomatoes
  • 2 sprigs Rosemary
  • 250 g butter
  • 2 tsp Tomato paste
  • 2 tsp Olive oil
  • 1 tsp Paprika powder (sweet)
  • Salt
  • Cayenne pepper

Instructions

    Heat the tomatoes until they blister, shock them in cold water, peel, quarter, seed and dice finely. Rinse the rosemary, shake dry, pluck and finely chop.

    Cut the butter into pieces and beat with a stand mixer or hand mixer until it forms peaks. Gradually add tomato paste and olive oil. Season with paprika powder, salt and cayenne pepper. Gently fold in the rosemary and tomatoes, taste, then transfer to a bowl. Chill until serving.
