Ingredients
- 300 g potatoes (about 2 potatoes)
- 2 cloves garlic
- 1 tbsp black olives
- 0.5 bunch Parsley
- 2 tbsp lemon juice
- 3 tbsp olive oil
- Salt
- Pepper (freshly ground)
Instructions

Wash the potatoes and cook them with skin until soft. Let cool briefly, peel, and mash finely with a fork.

Peel and finely chop the garlic. Pit and finely chop the olives. Wash and finely chop the parsley. Add 6–8 tbsp hot water, lemon juice, and olive oil to the potato purée. Season with salt and pepper, then serve in glasses. Pair with celery sticks, fennel, or grissini.
