Ingredients
- 30 ml lime juice (juice of 1 lime)
- Salt
- 2 tbsp olive oil
- 0.5 small red chili pepper (deveined and finely chopped)
- 1 spring onion (finely chopped)
- 1 large ripe avocado
- 2 tbsp lemon juice
- 200 g fresh or frozen crab meat

For the vinaigrette whisk lime juice and salt, gradually pour in the oil while stirring. Stir in chili and spring onion.

Cut the avocado lengthwise and remove the pit. Scrape out the flesh leaving about 3 mm on the skin. Dice the flesh and immediately drizzle with lemon juice. Break up the crab meat with a fork and add to the avocado cubes. Pour the vinaigrette over and mix well. Fill the mixture into the avocado shells, cover and refrigerate for about 1 hour. Serve cold.
