  • 700 g beetroot
  • 1 Red Onion
  • 1 red bell pepper
  • 2 tbsp walnut oil
  • 2 tbsp olive oil
  • 1 Orange (juice)
  • 2 tbsp fruit vinegar
  • Salt
  • Pepper (freshly ground)

    Peel the beetroot with a vegetable peeler and grate it finely. Peel and dice the onion into small cubes. Wash the bell pepper, halve it, remove seeds and membranes, then cut into small cubes. Whisk together the walnut oil, olive oil, orange juice, vinegar, salt, pepper, and sugar to make a dressing and taste. Combine all ingredients in a bowl and let rest for about 30 minutes. Serve arranged in bowls or glasses.
