Potato & Pickled Herring Salad

Ingredients

  • 600 g waxy potatoes
  • 400 g small beetroot
  • 1 onion
  • 1 sour apple
  • 50 g walnut kernels
  • 6 pickled herring fillets
  • 100 g Sour cream
  • 50 g yogurt
  • 2 tbsp freshly chopped parsley
  • 1 splash Lemon juice
  • 1 pinch sugar
  • Salt
  • Pepper

Instructions

    Wash the potatoes and beetroot, then steam together for about 30 minutes; beetroot may need a few minutes longer. Cool the potatoes and dice them. Peel, cool, and dice the beetroot as well.

    Peel and finely dice the onion. Peel the apple, quarter it, remove the core, and dice the quarters. Roughly chop the walnuts. Pat the herring dry and cut into strips. Combine all prepared ingredients in a bowl.

    Whisk together sour cream, yogurt, 1–2 tbsp water, and parsley until smooth. Season with lemon juice, sugar, salt, and pepper, then fold into the salad.

    Let the salad rest for about 10 minutes before serving.
