- 1 kg white asparagus
- 1 tsp butter
- 2 tbsp chopped parsley
- 1 small red onion (finely chopped)
- 2 tbsp white wine vinegar
- a pinch of sugar
- 1 tbsp water
- 3 tbsp seed oil
- Salt
- ground pepper
Instructions

Peel the asparagus thoroughly, trim the ends and cook in boiling salted water with butter for about 18 minutes.

Whisk together vinegar, sugar, water, oil, salt, and pepper; stir in parsley and onions and adjust seasoning.
