Ingredients

  • 2 kg white asparagus
  • 1 tsp salt
  • 1 tsp butter
  • a pinch of sugar
  • 200 g butter
  • 15 small sage leaves
  • 50 g raw ham
  • Pepper

Instructions

    Peel the asparagus thoroughly, trim the ends. Bring plenty of water with salt, butter and sugar to a boil and cook the asparagus for about 18 minutes.

    Remove with a slotted spoon and drain.

    For the sauce melt butter, skim off foam. Wash sage, pat dry and sauté in 1 tbsp butter, then add remaining butter. Cut ham into thin strips, fold into the sage butter and season with pepper.
