Asparagus with Smoked Salmon Rolls

Ingredients
- 4 spears of green asparagus
- 1 tbsp Lemon Juice
- 1 tbsp butter
- 8 slices smoked salmon
- 200 g herb cream cheese
- 4 stalks chives
- 4 salad leaves

Remove the woody base of the asparagus and carefully halve each spear lengthwise with a sharp knife. Cook in lightly salted water with lemon juice and butter. Lay two slices of smoked salmon on top of each other in a shingle pattern.

Fill a squeeze bottle with the cream cheese and pipe a strand along one side of each salmon slice. Roll the salmon around the filling and secure with a chive sprig. Arrange the rolls on salad leaves and asparagus, garnish with herbs or flowers as desired.
