Cauliflower Casserole with Tomatoes

Ingredients

  • 1 large cauliflower
  • 6 tomatoes
  • 150 g smoked turkey breast fillet
  • 1 tbsp Sunflower oil
  • 8 eggs
  • 200 g herb cream cheese
  • 2 tbsp chives sprigs

Instructions

    Divide cauliflower into small florets and cook in boiling salted water for about 8 minutes until al dente, then drain. Reserve 300 ml of cooking liquid.

    Briefly blanch the tomatoes, cool, peel, and roughly dice them. Cut the turkey breast into small cubes.

  3. 3.

    Heat oil in a non-stick pan, sauté the turkey cubes over medium heat while turning, then set aside.

  4. 4.

    Whisk eggs with the cauliflower water and cream cheese. Place cauliflower with tomatoes and turkey cubes in a greased baking dish and pour the egg‑cream mixture over it. Bake in a preheated oven at 180 °C (mid) for about 25–30 minutes.

    Sprinkle chopped chives on top before serving.
