Asparagus with Serrano Ham

- 250 g asparagus (green)
- 250 g asparagus (white)
- 4 cooked potatoes
- 1 sprig parsley
- 4 slices Serrano ham
- 4 tbsp butter
- 2 tbsp lemon juice
- 1 tsp sugar
- Salt
- Pepper

Peel the white asparagus thoroughly, wash the green asparagus, remove the woody ends from both and cut diagonally into 2-3 cm pieces. Simmer the white asparagus in plenty of salted water with sugar and lemon juice for about 10 minutes, then add the green asparagus and cook together for about 15 minutes.

Cut the potatoes into wedges and warm them in 1 tbsp melted butter, do not brown, season with salt and pepper. Brown the remaining butter in a pan, drain the asparagus and briefly toss it in the browned butter. Arrange the asparagus with potato wedges on plates, add the ham decoratively and serve garnished with parsley.
