Artichokes with Potato Cream

Ingredients
- 2 artichokes (about 350 g)
- 200 g sweet potatoes
- Salt
- basil (3 tbsp each, finely chopped)
- parsley (3 tbsp each, finely chopped)
- 4 tbsp Sour cream
- 1 tsp Mustard
- Pepper (freshly ground)
- Lemon juice
Instructions

Remove the stems and outer leaves from the artichokes, trim the leaf tips.

Simmer the artichokes in plenty of boiling water for about 40 minutes.

Peel the potatoes, cut into small pieces and cook in salted water until tender, about 20 minutes; drain and set aside.

Blend the cooked potatoes with the herbs briefly, then stir in sour cream, mustard, and about one cup of water.

Season with salt, pepper, and lemon juice to taste.
