Asparagus with Breadcrumbs and Egg

Ingredients

  • 800 g green asparagus tips
  • Salt
  • 1 tsp sugar
  • 2 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 4 tbsp rapeseed oil
  • pepper (ground)
  • 2 hard‑boiled eggs
  • 2 fresh garlic cloves
  • 2 tbsp breadcrumbs
  • 2 tbsp chopped hazelnuts
  • 2 tbsp butter
  • 2 tbsp freshly chopped parsley

Instructions

    Add the asparagus to boiling salted water with the sugar and cook for 6-8 minutes until slightly firm.

    Meanwhile, whisk together lemon juice, vinegar, oil, salt and pepper for the dressing. Drain the asparagus and place on a plate. Drizzle with the dressing and let cool slightly.

    Peel and finely chop the eggs. Peel and finely chop the garlic. In a hot pan, brown the breadcrumbs, hazelnuts and garlic in butter while stirring until golden. Spread over the asparagus, top with the egg pieces and sprinkle with parsley before serving.
