Ingredients

  • 2 organic oranges
  • 1 tbsp honey
  • 4 tbsp olive oil
  • 800 g green asparagus
  • Salt
  • Pepper
  • 200 g strawberries
  • 150 g feta (45% fat in the product)
  • 4 tbsp balsamic vinegar

Instructions

    Peel oranges hot and dry rub them. Grate zest from one orange finely. Peel oranges so that all the white pith is removed; cut fruit segments between the separating membranes, catching the juice. Squeeze any remaining juice from the membranes into a pot. Add fruit segments, orange zest and juice to a saucepan.

    Add honey and simmer everything for 10–12 minutes over medium heat. Let cool for 10 minutes; then add 2 tbsp oil.

    Meanwhile wash asparagus, cut off woody ends and peel the lower third of the stalks. Heat remaining oil in a pan and sauté asparagus for 7–8 minutes over medium heat. In the meantime clean, wash and halve strawberries.

    Season asparagus with salt and pepper, arrange on plates and distribute strawberries over it. Sprinkle feta on top, grind fresh pepper over everything and drizzle some balsamic vinegar. Drizzle the orange dressing over the Asparagus Strawberry Salad and serve.
