Asparagus Soup with Shrimp

- 1 Shallot
- 60 g starchy potatoes
- 1 tbsp butter
- 2 tbsp dry white wine
- 250 ml vegetable broth
- 3 sprigs Basil
- 2 tbsp crème fraîche

Wash, trim and peel the lower third of the green asparagus; cut into small pieces. Peel and dice the shallot and potatoes. Sauté the vegetables in butter, deglaze with wine, then add broth. Simmer gently for about 10 minutes until tender. Puree with fresh basil leaves and crème fraîche, adding more broth if needed or reducing further. Season with salt and pepper.

Peel the white asparagus completely and cut into small pieces. Sauté with the cleaned and diced shallot and potatoes in butter. Add wine and broth, then simmer for about 15 minutes. Blend until smooth and frothy, seasoning with salt and nutmeg.

Combine the shrimp meat with chives, salt, and lemon juice, tasting to adjust.

First ladle the green soup into four glasses, carefully pour the white soup on top. Spoon a tablespoon of shrimp mixture onto each glass and garnish with chive ribbons before serving.
