- 400 g green asparagus
- 1 tbsp oil
- 1 onion
- 1 Garlic clove
- 6 shrimp (pre‑cooked, deveined and peeled except for tail segment)
- 500 ml vegetable broth
- 1 tsp cornflour
- 1 egg
- Salt
- ground pepper
- soy sauce
- chopped chives (for garnish)
Instructions

Peel and halve the lower third of the asparagus.

Peel and finely chop onion and garlic. Sauté with the asparagus in hot oil for about 5‑6 minutes, stirring slowly. Add shrimp, cook briefly, dust with cornflour, then deglaze with broth. Bring to a boil and simmer for 1‑2 minutes. Stir in whisked egg, then season with salt, pepper and soy sauce. Ladle soup into preheated bowls and sprinkle with chives before serving.
