  • 1 bundle green asparagus
  • 1 Shallot
  • 1 Garlic clove
  • 50 ml white wine
  • 600 ml Poultry broth
  • 2 tbsp crème fraîche
  • 1 tbsp butter
  • 150 ml milk
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • chopped pistachios (for garnish)

Instructions

    Peel the lower third of the asparagus and cut it into small pieces. Peel and finely dice the shallot and garlic clove. Sauté everything together in hot butter, then deglaze with white wine. Add the broth and simmer gently for about 30 minutes until tender. Stir in crème fraîche and blend the soup until smooth. Season with salt, pepper, and nutmeg.
