Ingredients
- 500 g asparagus (green)
- 1 lime (unprocessed, zest and juice)
- 200 ml milk
- 200 ml heavy cream
- 2 tsp vegetable broth
- Salt
- Pepper
- a pinch of sugar

Trim the asparagus and remove the woody ends, then slice into rounds.

Place the asparagus in a pot and pour 300 ml water over it. Add the broth and lime juice, cook until tender for about 10 minutes.

Blend very finely, add the cream, and season with salt, pepper, and sugar. Heat the milk in a small saucepan and whisk vigorously to create a rich foam using a mini whisk.

Fill large pre-warmed glasses with the soup, top with the milk foam, and serve garnished with lime zest.
