Ingredients

  • 200 g mixed leaf lettuce
  • 500 g white asparagus
  • 4 Cherry Tomatoes
  • 100 g cooked ham (pieces)
  • 2 Spring Onions
  • Salt
  • Pepper
  • 0.5 tsp Sugar
  • 3 tbsp Lemon juice
  • 2 tbsp white wine vinegar
  • 3 tbsp soybean oil
  • 1 dash mustard
  • 1 tbsp chives ribbons

Instructions

    Wash, peel and cook the asparagus in lightly salted water flavored with a pinch of sugar and 1 tbsp lemon juice until al dente; remove, shock in cold water and drain well. Clean, wash, dry and cut the lettuce into bite-sized pieces. Trim the spring onions, wash and slice them diagonally into 3–5 mm ribbons.

    Dice the ham. Cut the asparagus into bite-sized pieces. Wash and quarter the tomatoes. Whisk together the remaining lemon juice, salt, pepper, mustard, white wine vinegar and soybean oil to make a vinaigrette. Toss the lettuce with tomatoes, spring onions, ham and asparagus, drizzle with the vinaigrette, plate, and sprinkle with chives ribbons before serving.
