Stuffed Bell Peppers with Feta

Ingredients
- 5 large red bell peppers
- 1 onion
- 2 tbsp olive oil
- 400 g feta cheese
- 30 g Parmesan cheese (1 piece)
- 2 sprigs thyme
- 50 g crème fraîche
- 1 egg yolk
- Salt
- Pepper

Wash the bell peppers, halve them and remove white membranes and seeds. Dice one pepper into small cubes. Peel and dice the onion.

Heat olive oil in a pan. First add the halved peppers and sauté for 2 minutes over high heat. Remove from the pan. Then add the diced pepper and onion to the pan and cook for about 5 minutes over medium heat. Take out and let cool.

Crush the feta with a fork. Grate the parmesan finely. Wash the thyme, shake off excess water, strip leaves from the stems and finely chop them. Mix the feta with the pepper cubes, onion, parmesan, thyme, crème fraîche and egg yolk. Season with salt and pepper.

Fill the peppers with the feta mixture, smooth it out and place in a baking dish. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 20–25 minutes until golden yellow. Divide onto four plates and serve immediately.
