Asparagus Salad with Ham
The asparagus salad with ham from Spoonsparrow tastes wonderfully seasoned and brings spring feelings to the table!
Ingredients
- 400 g green asparagus
- Salt
- 4 medium tomatoes
- 4 handfuls arugula (about 100 g)
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp fruit vinegar
- 1 tsp Honey
- black pepper (freshly ground)
- 12 slices Parma ham
- parmesan shavings (for garnish)
Instructions

Wash the asparagus, peel the lower third and cut off the tough ends. Cut into about 5 cm pieces and cook in boiling salted water for about 8 minutes. Meanwhile, briefly blanch the tomatoes in the boiling water, shock them with cold water and peel the skins.

Remove the base of the stems and quarter them. Drain the asparagus and shock it with cold water. Wash the arugula, dry it thoroughly and cut into fine strips. Arrange the arugula, tomatoes and asparagus on plates.

Whisk 2 tbsp oil with lemon juice, vinegar and honey, season with salt and pepper. Drizzle the vinaigrette over the salad. Quickly fry the Parma ham in the remaining hot oil and add it together with parmesan shavings to the salad before serving.
