White Asparagus en Papillote with Scampi

Ingredients
- 2 kg white asparagus
- 2 passion fruits
- 1 Orange (juice)
- 1 tsp brown sugar
- Sea salt
- white pepper (freshly ground)
- 3 tbsp butter
- 8 seedless cherry tomatoes (without stem and de-seeded)
- chili flakes
- 1 tbsp freshly chopped parsley

Peel the asparagus and trim any woody ends if necessary.

Preheat the oven to 180°C fan. Line a baking dish with parchment paper.

Spread the asparagus in the dish. Cut the passion fruits in half, scoop out the pulp and seeds. Mix with orange juice, sugar, salt and pepper, then spread evenly over the asparagus. Dot with 2 tbsp butter in small piles. Fold the parchment over the asparagus and seal well. Bake for about 30 minutes.

Meanwhile, rinse the scampi and pat dry. In the remaining butter, fry them in a hot pan for about 2 minutes. Season with salt and chili flakes, then stir in parsley at the end.

Remove the asparagus from the oven, open the parchment, place the cherry tomatoes on top and serve.
