Ingredients
- 150 ml Milk (3.5% fat)
- 300 g Low-fat quark
- 200 g mascarpone
- 4 tbsp Honey
- 0.5 Vanilla bean
- 1 tsp cinnamon
- 4 slices whole-grain toast
- 150 ml espresso
- 400 g mixed berries (e.g., raspberries, blackberries, currants)
- 2 tsp cocoa powder (for dusting)

Whisk the milk, quark, and mascarpone together until smooth. Slice the vanilla bean lengthwise and scrape out the seeds. Add honey, vanilla seeds, and cinnamon to the cream mixture and stir well in a large bowl. Dice the toast slices into cubes and spread a few on each glass. Drizzle with espresso. Layer some berries and spread a bit of cream over them.

Repeat the process and finish with a layer of quark cream. Cover all glasses and refrigerate for 1 hour to set. Just before serving, dust thickly with cocoa powder.
