Ingredients
- 1 l chicken broth
- 2 carrots
- 100 g mushrooms
- 0.5 bunch scallions
- 100 g Chinese egg noodles
- Salt
- pepper (ground)
- soy sauce
- lemon juice (optional)
- 2 tbsp chopped chives
- 1 sprig parsley
Instructions

Bring the chicken broth to a boil.

Peel and slice the carrots diagonally into thin rounds. Clean and slice the mushrooms. Trim the scallions and cut them into about 0.5 cm thick rolls.

Add the vegetables to the boiling broth and simmer for several minutes until tender yet firm.

Cook the noodles according to package instructions, rinse under cold water, drain, and divide among serving bowls.

Season the vegetable soup with salt, pepper, soy sauce, and optional lemon juice. Garnish each bowl with chives and fresh parsley.
