Pearled Barley Soup

Ingredients
- 200 g pearled barley
- 80 g smoked ham
- 1 stalk leek
- 2 stalks celery
- 2 carrots
- 2 Potatoes
- 1 bunch parsley
- 1 onion
- 2 Garlic cloves
- 1 bay leaf
- 2 l beef broth (from the can)
- 2 tbsp oil
- salt and pepper
- 0.5 bunch Parsley
Instructions

Cut the bacon into fine strips. Clean and slice the leek and celery. Peel and finely dice the carrots, potatoes, onion, and garlic.

In a pot, brown the bacon pieces, add 2 tbsp oil, and sauté the vegetables for 5 minutes while stirring. Add the barley and bay leaf, pour in the broth, and bring to a boil once.

Simmer over low heat for 1 hour, season with salt and pepper, and garnish with parsley.
