Ingredients
- 100 g Chinese egg noodles
- Salt
- 750 ml chicken broth
- 2 lemongrass stalks
- 2 fresh red chilies
- 3 spring onions
- 2 small carrots
- 1 handful spinach leaves
- 1 tsp fine ginger strips
- 150 g raw peeled shrimp (or crabs)
- 1 tbsp fish sauce

Add noodles to boiling salted water, bring to a boil once, loosen slightly, remove from heat and let soak for about 5 minutes, then drain and set aside.

Bring chicken broth to a boil. Finely chop lemongrass and cleaned chilies; trim spring onions and slice white and light green parts diagonally into thin slices. Peel carrots and slice them as well. Rinse spinach, wash, and trim. Add ginger with the remaining vegetables and shrimp to the broth and simmer for about 6-8 minutes. Then add the egg noodles, warm briefly, and season with fish sauce.
