Ingredients
- 200 g glass noodles
- 300 g shiitake mushrooms
- 2 tbsp peanut oil
- 1 red bell pepper (sliced into strips)
- 200 g soy bean sprouts
- 3 tbsp Soy sauce
- 1 tsp freshly chopped ginger
- 1 dried chili pepper (ground)
- chives (for garnish)

Prepare the glass noodles according to package instructions and drain. Clean the mushrooms and sauté them in hot oil for 1-2 minutes.

Add bell pepper and bean sprouts, stir-fry until translucent for 2-3 minutes, then remove from heat. Toss the noodles with soy sauce, ginger, and chili; serve on small plates garnished with chives.
