Ingredients

  • 1 onion
  • 2 tbsp olive oil
  • 400 g ground beef
  • 2 tbsp Tomato paste
  • 400 g diced tomatoes (canned)
  • 1 tsp Dried oregano
  • Salt
  • a pinch of sugar
  • black pepper (freshly ground)
  • 400 g spinach
  • Salt
  • 1 Garlic clove
  • 350 g ricotta
  • 50 g grated Parmesan
  • 1 egg
  • black pepper (freshly ground)
  • 8 large cannelloni (about 250 g)
  • 150 g mozzarella

Instructions

    For the sauce, peel and finely dice the onion. Sauté briefly in hot oil. Add the ground beef and cook until crumbly. Stir in tomato paste and add tomatoes. Cook for about 20 minutes, stirring occasionally, until thickened. Finally add oregano and season with salt, sugar, and pepper.

    Preheat the oven to 200°C (Oven + fan).

    Spread about half of the sauce in a baking dish.

    Wash, trim, and blanch the spinach in boiling salted water briefly. Drain, shock in cold water, then squeeze dry and chop by hand. Peel and finely chop the garlic. Mix ricotta with garlic, Parmesan, and egg. Fold in spinach and season with salt and pepper. Fill the cannelloni using a piping bag with a larger nozzle and place them in a baking dish. Spread remaining sauce over the pasta and top with sliced mozzarella. Bake for about 45 minutes until golden brown.
