Potato Celery Salad with Apples

Ingredients
- 800 g waxy potatoes
- Salt
- 2 stalks celery
- 1 tart apple (e.g., Granny Smith)
- 2 tbsp lemon juice
- 2 tbsp grape seed oil
- 100 g yogurt
- 2 tbsp light cream
- 1 tbsp grainy mustard
- 0.5 tsp Peppercorns
- 0.5 tsp Sea Salt

Peel, wash and slice the potatoes. Boil in salted water for about 15 minutes. Drain and let cool to lukewarm.

Wash, trim and finely slice or julienne the celery. Set aside the celery leaves for garnish. Wash the apple, quarter it, remove the core and cut the quarters into thin strips. Arrange the potatoes with apples and celery on a large platter. Drizzle with lemon juice and oil.

For the dressing whisk together yogurt, light cream and mustard. Pour over the salad. Crush peppercorns with salt in a mortar, sprinkle over the salad and serve garnished with celery leaves.
