Asian Carrot Salad

Asian carrot salad from Spoonsparrow – a vitamin-rich mix of crisp carrots, spicy dressing and crunchy sesame.

Ingredients

  • 2 carrots
  • 1 handful coriander (5 g)
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 2 tbsp sesame oil
  • 1 tsp lemon juice
  • 0.5 tsp Chili flakes
  • 1 tbsp sesame seeds (15 g)

Instructions

    Peel, wash the carrots and cut them into long strips with a vegetable peeler. Wash the coriander, shake dry, pluck off leaves, set aside half for garnish and finely chop the other half.

    Whisk soy sauce, rice vinegar, sesame oil, lemon juice, chili flakes, sesame seeds and chopped coriander in a bowl to make the dressing.

    Toss the carrot strips with the dressing. Sprinkle Asian carrot salad with coriander and sesame seeds and serve.
