Ingredients

  • 100 g Lollo biondo
  • 200 g arugula
  • 1 Red Onion
  • 50 g sun‑dried tomatoes (in oil)
  • 200 g smoked salmon
  • 200 g Goat cheese
  • 4 tbsp white balsamic vinegar
  • 4 tbsp olive oil
  • 1 tbsp capers
  • Pepper (freshly ground)

Instructions

    Wash, dry and tear the leafy greens into bite‑sized pieces. Peel the onion, halve it and slice into thin strips. Drain the sun‑dried tomatoes well and roughly chop them. Arrange the salad on bowls or plates and sprinkle with onions and tomatoes.

    Distribute the smoked salmon over the greens and crumble the goat cheese on top. Drizzle with balsamic vinegar and olive oil, then add capers, freshly ground pepper to taste, and serve immediately.
