Arugula, Quinoa and Goat Cheese Salad

The arugula, quinoa and goat cheese salad from Spoonsparrow is the perfect healthy filling for lunch.

Ingredients

  • 300 g quinoa
  • Salt
  • 150 g arugula (2 bunches)
  • 100 g hazelnut kernels
  • 140 g firm goat fresh cheese
  • 2 tbsp lemon juice
  • 4 tbsp mild olive oil
  • Pepper
  • 4 tsp liquid honey

Instructions

    Rinse the quinoa in a sieve under hot water until it runs clear. Then transfer it to a pot and cook according to the package instructions in salted water.

    Meanwhile, wash and dry the arugula. Roughly chop the hazelnuts. Crumble the goat cheese. Mix the cooked quinoa with lemon juice and olive oil, seasoning with salt and pepper.

    Combine the quinoa, arugula, hazelnuts and goat cheese; divide onto four plates and drizzle each with 1 tsp honey.
