Arugula Pasta

The arugula pasta from Spoonsparrow is not only delicious but also ready in no time!

Ingredients

  • 400 g spaghetti
  • 4 tbsp olive oil (≈40 ml)
  • 4 Garlic cloves
  • 1 dried chili pepper
  • Salt
  • black pepper (freshly ground)
  • a handful arugula
  • parmesan

Instructions

    Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package instructions. Peel and finely chop the garlic. Wash, dry, deseed, and finely dice the chili pepper.

    Heat the olive oil in a pan, add the garlic and chili, and lightly sauté over medium heat. Remove from the stove. Wash the arugula, shake off excess water, pluck the leaves, and roughly chop them.

    Just before the spaghetti is done, reheat the pan, add 3–4 tbsp of pasta cooking water, and stir. Drain the spaghetti and transfer it to the pan. Sprinkle the arugula over the pasta and mix everything well.

    Serve the arugula pasta on preheated plates, grate some parmesan over it, and serve immediately.
