Vegetarian One-Pot Pasta

Vegetarian one-pot pasta from Spoonsparrow is perfect for lunch breaks and evenings, saving a lot of dishwashing.

Ingredients

  • 2 stalks leeks
  • 75 g sun-dried tomatoes in oil (jar)
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 400 g linguine
  • 500 ml vegetable broth
  • 60 g green olives (pitted)
  • 150 g feta cheese (45% fat in total)

    Clean the leeks, cut into rings, wash and drain. Drain the tomatoes and chop them small.

    Heat oil in a large pot. Sauté the leeks and tomatoes for 2–3 minutes over medium heat. Season with salt and pepper and add the pasta. Pour in broth and 750 ml water, bring to a boil and simmer gently for about 10 minutes until the noodles are al dente, stirring occasionally and adding more water if needed.

    Meanwhile slice the olives into rings, crumble the feta, and fold them into the quick one-pot pasta at the end. Taste and serve on plates.
