Potato Onion Salad with Radicchio

Ingredients

  • 700 g cooked potatoes
  • 1 radicchio
  • 200 g pickled silver onions (from the jar)
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp Sugar
  • 2 tbsp sunflower oil
  • 100 g Sour cream
  • 2 tbsp chopped parsley

Instructions

    Cut the potatoes into cubes. Drain the silver onions. Separate the radicchio into leaves, wash, dry, and tear into bite‑size pieces.

    Whisk vinegar with salt, pepper, sugar, oil, and sour cream; season to taste and fold in 1 tbsp of parsley.

    Combine the potatoes and silver onions with the dressing, then arrange on a bowl with the radicchio. Sprinkle with remaining parsley before serving.
