Ingredients

  • 250 g glass noodles
  • 200 g carrots
  • 2 thin stalks leeks
  • 100 g bamboo shoots (canned)
  • 1 large red bell pepper
  • 4 cabbage leaves
  • 3 tbsp oil
  • 150 ml Vegetable broth
  • Salt
  • ground pepper

Instructions

    Peel the carrots and cut them into fine sticks.

    Wash, trim, and slice the white and light green parts of the leeks into rings.

    Drain the bamboo shoots and cut into strips. Wash, trim, halve, seed, remove the white skin from the bell pepper, and cut into small pieces. Wash the cabbage, pat dry, and slice into strips.

    Place the noodles in a bowl and pour boiling water over them; let stand for 5 minutes.

    Stir‑fry the vegetables in hot oil, season with salt and pepper, add the broth, and simmer for another 4–5 minutes. Drain the noodles from the water, spread on plates, top with the vegetables, and serve hot.
