Ingredients

  • 500 g Green Asparagus
  • 250 g radishes (with greens)
  • 1 herb (e.g., wild garlic, arugula, borage)
  • 3 spring onions
  • 25 g pine nuts
  • 2 tbsp Rapeseed oil
  • Salt
  • freshly ground pepper

Instructions

    Wash the asparagus, peel the lower third of the stalks and cut off tough ends. Cut the stalks into about 5 cm pieces. Separate the radish greens from the roots, wash them thoroughly, shake dry and roughly chop. Wash, clean and quarter the radishes. Rinse the herbs, shake dry, chop and add to the radish greens. Wash, clean and slice the spring onions into fine rings.

    Roast the pine nuts in a pan or wok without fat until lightly browned. Remove them and pour the oil into the pan. Sauté the asparagus while stirring for 3-4 minutes. Add the radishes and spring onions and continue cooking for another 2-3 minutes. Then fold in the herbs and cook briefly with them. The asparagus should be cooked yet still have a bite. Season well with salt and pepper, sprinkle with pine nuts and serve.
