Ingredients

  • 12 small artichokes (young, cleaned)
  • 6 tbsp lemon juice
  • Salt
  • 1 tsp flour
  • 2 cloves garlic (finely chopped)
  • 1 tsp Mustard
  • 1 tbsp sherry
  • 3 tbsp sherry vinegar
  • 6 tbsp extra‑virgin olive oil
  • Pepper (freshly ground)
  • 1 bunch parsley (chopped)

Instructions

    Drizzle the artichokes with lemon juice, then place them in boiling salted water and cook with flour for about 15 minutes.

    Drain and let them dry well. Mix garlic, mustard, sherry, vinegar, oil, salt and pepper together. Halve the artichokes, sprinkle with parsley, drizzle with the vinaigrette and allow to absorb fully.
