Ingredients

  • 8 medium-sized artichokes
  • Salt
  • 1 lemon (juice)
  • 200 g mixed green salad (e.g., spinach, frisée, iceberg)
  • a handful of edible flowers (e.g., meadow bells)
  • 4 tbsp apple cider vinegar
  • 4 Tbsp sunflower oil
  • pepper (ground)
  • a pinch of sugar
  • 60 g Parmesan

Instructions

    Wash and trim the artichokes, cut off outer leaves and tough tips, halve them and remove the choke. Boil in salted water with lemon juice for 6-8 minutes. Cool under cold running water and drain.

    Wash, dry, and tear the salad into bite‑sized pieces. Remove petals from flowers. Combine all prepared ingredients in a bowl.
