Ingredients
- 8 medium-sized artichokes
- Salt
- 1 lemon (juice)
- 200 g mixed green salad (e.g., spinach, frisée, iceberg)
- a handful of edible flowers (e.g., meadow bells)
- 4 tbsp apple cider vinegar
- 4 Tbsp sunflower oil
- pepper (ground)
- a pinch of sugar
- 60 g Parmesan
Instructions

Wash and trim the artichokes, cut off outer leaves and tough tips, halve them and remove the choke. Boil in salted water with lemon juice for 6-8 minutes. Cool under cold running water and drain.

Wash, dry, and tear the salad into bite‑sized pieces. Remove petals from flowers. Combine all prepared ingredients in a bowl.
