Artichoke Quiche

Ingredients
- 3 sheets frozen puff pastry (180 g)
- 500 g artichoke hearts (canned)
- 3 eggs
- 200 g Sour Cream
- Salt
- white pepper
- flour (for the work surface)
- 1 oven‑safe dish (24 cm diameter)
- tarragon (1 tbsp chopped)
- 150 g Sour cream
- 4 tbsp heavy cream
- 1 tbsp Lemon Juice
- Salt
- pepper from grinder
- Salad leaves
Instructions

Lay the puff pastry sheets side by side and let them thaw. Drain the artichoke hearts in a sieve.

Beat the eggs and crème fraîche, season with salt and pepper.

Place the pastry sheets on top of each other and roll out into a circle on a lightly floured surface. Rinse the dish cold, do not dry it, and line it with the dough, trimming excess.

Lay the artichoke hearts on the dough. Pour the egg custard over them and bake in a preheated oven at 200 °C (medium) for about 35 minutes. Let rest for 10 minutes before cutting.

Whisk crème fraîche with heavy cream and lemon juice, fold in the herbs, season with salt and pepper.

Cut the quiche into pieces and serve with salad leaves and herb sauce.
