Angus Beef Fillet with Walnut Sauce and Baked Potato

Ingredients
- 4 firm potatoes (about 120 g each)
- 4 Angus beef fillet steaks (about 180 g each)
- 1 tbsp plant oil
- 1 onion
- 100 g chopped walnuts
- 300 ml heavy cream
- 20 g butter
Instructions

Preheat the oven to 200°C with top and bottom heat.

Wash the potatoes and cook them in salted water with skins on for about 20 minutes.

Meanwhile, heat the oil in a pan and sear the steaks briefly on both sides, then remove and season with salt and pepper.

Drain the potatoes, cut crosswise slashes, and bake them in the oven on parchment paper for about 10 minutes.

After 5 minutes add the steaks to the baking sheet and cook for another 5 minutes (or longer if desired), then remove, season again, and let rest briefly.

While the meat cooks, dice the onion and sauté it in the pan drippings, deglaze with cream, and simmer for about 10 minutes over medium heat. Finally add the chopped walnuts, taste, and serve together with the steak and potato.

Serve a salad on the side if desired.
