Artichoke Cream Soup

A creamy artichoke soup made with fresh ingredients and a hint of lemon zest, served in elegant cups.
Ingredients
- 4 artichokes (cleaned and diced)
- 1 shallot (finely chopped)
- 1 Garlic clove
- 1 tsp thyme leaves
- 2 tbsp butter
- 250 ml white wine
- 650 ml broth
- juice of 1 lemon
- Salt
- black pepper (freshly ground)
- 0.5 l heavy cream
- 50 g cold butter cubes
Instructions

Sauté artichokes, shallot, thyme and pressed garlic in hot butter; add wine to deglaze, pour in broth and blend until smooth. Season with lemon juice, salt and pepper. Stir in the cream and simmer until thickened, then fold in butter cubes.
