Noodle Soup with Sausage

Ingredients

  • 250 g horn-shaped noodles
  • Salt
  • 2 stalks leeks
  • 3 Carrots
  • 800 ml vegetable broth
  • 3 pairs Vienna sausages
  • 2 tbsp freshly chopped parsley
  • Salt

Instructions

    Cook the noodles in boiling salted water for about 20 minutes until al dente.

    Wash, trim and slice the leeks into rings; peel and dice the carrots.

  3. 3.

    Bring the broth to a boil and add the carrots and leeks. Simmer gently for about 5 minutes.

    Slice the Vienna sausages and add them to the soup. Let them heat for 2–3 minutes.

    Add the drained noodles, stir in the parsley, season with salt, and serve hot.
