Spicy Thai-Style Beef Soup

Ingredients
- 800 ml beef broth
- 300 g beef fillet
- 2 carrots
- 2 red bell peppers
- 200 g Green beans
- 2 chilies (finely chopped)
- 1 bunch spring onions
- 100 g rice noodles
- 1 lemongrass stalk
- 2 kaffir lime leaves
- spicy chili sauce
- fish sauce
Instructions

Cook noodles in salted water according to package instructions until al dente, then rinse and drain.

Wash beef fillet, pat dry and slice into thin strips.

Peel carrots and cut into strips.

Wash bell peppers, halve, deseed and cut into strips.

Wash green beans, trim ends and cut diagonally into pieces.

Wash spring onions, trim roots and cut into small rings.

Bring broth to a boil with pressed lemongrass and kaffir lime leaves. Add green beans and carrots and simmer for about 5 minutes. Then stir in spring onion rings and bell pepper strips and cook another 5 minutes. In the last 4-5 minutes add beef strips and noodles to finish cooking. Season with chili sauce and fish sauce, remove lemongrass and lime leaves, and serve.
