Artichoke and Legume Vegetable

Ingredients

  • 400 g thick beans
  • 800 g peas
  • 2 cloves garlic
  • 8 artichokes
  • 1 bunch dill
  • 1 lemon
  • juice of one lemon
  • 4 tbsp olive oil
  • Salt

Instructions

    Halve the lemon and squeeze into a bowl with about 1 l water.

    Break off the stems of the artichokes, remove the rough outer leaves and cut off the tops. Trim the bottoms and scrape out the "straw" with a spoon. Quarter the artichoke hearts and place them in the lemon water.

    Chop dill, leaving some sprigs for garnish.

  4. 4.

    Steam the vegetables in a steamer basket for about 8–10 min. Remove and mix in a bowl with lemon juice and oil. Season with salt and add dill. Plate and garnish with dill.

    Serve with flatbread as desired.
